1 x 2 lb pork roast
2/3 cup blackberry all-fruit spread
1 tbsp balsalmic vinegar

Directions:
Directions:
Preheat oven to 375. Line a roasting pan with foil, and set a
greased metal rack on top. Place the roast on the rack. In a
small saucepan, stir together fruit spread and vinegar and
cook over mdm-low heat until a thick sauce forms. Spoon
half of sauce over roast to coat. Cook roast for 30-40 min per
pound, or to 145-160º F (per your own preference). Remove
from oven, cover and let stand 10 minutes before slicing.

When ready to eat, reheat remaining sauce of low heat until
hot, and serve with roast.
