4 boneless, skinless chicken breast halves
½ c. seasoned bread crumbs
½ tsp. dried basil
1 T. butter or margarine
¼ c. grated Parmesan cheese
1 egg
1 T. vegetable oil
cooked pasta
spaghetti sauce
mozzarella cheese

Directions:
Directions:
Make sure chicken is thin, so it cooks fast without burning the coating.

Flatten chicken to ¼ inch thickness. In a shallow bowl, combing bread crumbs, Parmesan cheese and basil. In another bowl, beat the egg. Dip chicken into egg, then coat with crumb mixture. In a large skillet, brown chicken in butter and oil over medium heat for 3 to 5 minutes on each side or until juices run clear. I serve with pasta, spaghetti sauce and mozzarella cheese on top.
