1 Deep Pie Shell
3 Eggs
1 Cup Half & Half (I use whole milk)
1 Medium Onion - Chopped
1 Cup Swiss Cheese - Cubed
8 Strips Bacon
1/2 Teaspoon Salt
1/2 Teaspoon Pepper

Preheat oven to 450.
Pierce bottom of pie shell with a fork. Do not puncture the pie pan.
Cook shell for 5 minutes.
Remove from oven.
Cook bacon until crisp.
Crumble bacon into the bottom of the pie shell.
Put cheese cubes on top of bacon.
Cook onion until transparent in 1-2 Tablespoons bacon grease.
Put onion on top of cheese cubes.
Beat together eggs, milk, salt and pepper.
Pour into shell.
Cook at 450 for 15 minutes, then reduce heat to 350 for 15 minutes.
Check with a fork to see if the quiche has set.
Serve hot.
