Meatloaf:
1/2 onion; chopped and divided
5 cloves garlic
1 tsp. oregano
1 tsp. salt
1/2 tsp. pepper
1 lb. ground sirloin
1 lb. ground pork
1/3 C. shredded Parmesan
2 tsp. Worcestershire
1/2 C. Italian seasoned breadcrumbs
1 beaten egg

Tomato Gravy:
1/2 onion, chopped
2 cloves garlic, minced
1 tsp. oregano
1 Tbsp. olive oil
1 Tbsp. butter
3 Tbsp. tomato paste
1 large can crushed tomatoes (28 oz)
1 can (15 oz) chicken broth
2 tbsp. cooking sherry

Directions:
Directions:
Saute the first 5 ingredients of the meatloaf recipe in 1 Tbsp. olive oil in a pan. Mix together the next 6 meatloaf ingredients in a large bowl. Add the sautéed ingredients and mix together well. Shape into a loaf on a cookie sheet covered with aluminum foil. Bake at 350 for 45 min.

While the meatloaf is baking, saute the first 3 sauce ingredients together in 1 Tbsp. olive oil. Add 1 Tbsp. butter. Add the tomato paste, crushed tomatoes and chicken broth. Simmer until thick. Add the cooking sherry at the end.
