Ingredients: 1 1/2 lbs. round steak, cut about 1/2 in thick Your favorite spaghetti sauce (gravy) recipe 1 clove garlic, finely sliced 1 tsp. grated Parmesan cheese 1 hard-cooked egg, chopped 1/2 tsp. parsley, chopped 2 slices bacon, cut in 1-inch pieces (optional) 1/2 tsp. salt 1/8 tsp. pepper 1/4 cup olive oil 1 small onion, sliced

Directions:You will need a large, heavy skillet and tight-fitting cover. 1. Lay out meat flat on work area (meat is all in one piece). 2. Cover steak with a mixture of: garlic, Parmesan cheese, egg, parsley, bacon (optional), salt and pepper. 3. Roll up steak to enclose mixture and tie securely with kitchen string. 4. Heat olive oil and onion in skillet about 5 minutes. Add steak roll, and slowly brown on all sides. 5. Slowly add spaghetti sauce (gravy) to browned steak. Cover skillet and simmer about 1 1/2 hours, or until steak is tender. 6. Remove string, slice and serve. |

Notes: When we would have a dinner party mom would always fix a huge Italian dinner. We would have an antipasto, minestrone soup, with the little meatballs like Grandma DiSalvatore had the grandkids make when we visited; salad with homemade dressing, baked chicken, beef rolls, pasta and gravy, cheeses, fruits and nuts. Plenty of wine was always available through out the entire meal.
