1 whole boneless, skinless chicken breast
1 cup sliced onion
2 cloves chopped garlic
2 TBS. oil
2 cups water
2 cups fat-free chicken broth
1 cup uncooked brown rice
1 TBS paprika
1/2 tsp pepper
1/2 tsp cayenne pepper
1/2 tsp. salt-free herb seasoning
1 TBS. dried parsley
1 141/2 oz. can diced tomatoes
1/2 lb. shrimp, peeled & deveined
1 1/2 cups frozen peas, thawed
1 TBS chopped pimentos

1. Cut chicken into long, thin strips. Heat oil in a dutch oven and add chicken, onion & garlic, and cook until chicken is lightly browned. Drain oil from dutch oven.

2. Add water, broth, rice, seasonings, and tomatoes. Bring to a boil. Reduce heat, cover and simmer 45 minutes.

3.Stir in shrimp, peas and pimentos.

4. Simmer 10 minutes or until shrimp turn opaque.

Add additional water if necessary.
