1 1/4 cups all-purpose flour
2 TBS. sugar
1 1/4 tsp. baking powder
1/4 tsp. salt
2 eggs, slightly beaten
1 1/4 cups milk
1/2 cup mashed cooked sweet potatoes
3 TBS. butter, melted

Directions:
Directions:
1. Combine flour, sugar, baking powder & salt in a mixing bowl. Combine eggs, milk, sweet potatoes and butter in another mixing bowl. Add to flour mixture. Stir until just combined, but still lumpy.

2. Heat a lightly-greased griddle over medium heat. Pour about 1/4 cup batter onto griddle for each pancake.

3. Cook over medium heat until pancakes are golden brown, turning to cook second sides when pancake surfaces are bubbly and edges are slightly dry, about 1-2 minutes per side.
