3/4 lb. orzo pasta
1/2 C. lemon juice
1/2 C. olive oil
2 tsp. salt
1 tsp. pepper
crumbled feta
1 1/2 - 2 lbs. raw shrimp
1C. sliced scallions
1 C. chopped fresh dill
1 C. chopped parsley
1 cucumber - peeled, seeded and diced
1/2 C. red onion, diced

Directions:
Directions:
1) Cook orzo according to pkg. directions; drain.
2) Whisk together lemon juice, olive oil, salt and pepper. Pour over hot pasta.
3) Toss peeled, deveined shrimp with some olive oil, salt and pepper. Roast for 5 - 6 min. in pan at 400º F. Toss with the salad
4) Mix together scallions, dill, parsley, cucumber and red onions. Add to the orzo mixture. Add feta last and toss well.
