1C. flour, divided
3T. ice water
1t. lemon juice
2T. powdered sugar
1/4 t. salt
3T. shortening

preheat oven to 350º
Combine 1/4C. flour, water and lemon juice, whisk to form a slurry. Combine remaining 3/4C. flour, powdered sugar and 1/4t. salt in large bowl;cut in shortening until mixture resembles course meal. Add slurry, toss with fork until moist. Press dough into 4" circle on 2 sheets of overlapping plastic wrap; cover with 2 more sheets of plastic. roll dough into 12" circle and freeze 10 mins. remove from freezer and remover top layer of platic. place in pie plate, remove second layer of plastic. Bake 8 minutes.

i've tried lots of pie crust recipes, and this one comes out flaky and perfect every time! especially good with pecan pie.
