Chocolate Mint Bars Recipe

Base layer:
Melt together
2 oz unsweetened choc
c butter
Beat together in a separate bowl until ivory colored
2 eggs
1 c sugar
Add and still till combined
c unsifted flour
c sliced unblanched almonds (opt)

chocolate butter mixture
Pour batter evenly into a greased, flour dusted 9 sq pan
Bake 25 min (approx) at 350. Let cool in pan.

Mint cream layer:
Beat together until smooth
1 c sifted pwdr sugar
3 T soft butter
2 T half and half
t peppermint extract.
Spread evenl over cooled chocolate layer.
Cover and chill until firm (about 1 hour).

Chocolate Glaze:
Melt together
2 oz sweet chocolate
2 T butter
Drizzle over mint topping.
Cover and chill until firm; cut into bite sized squares.
Makes 36 bars.
