2 T oil
2 small onions, chopped
3 tomatoes, peeled and chopped
1 tsp mild curry powder
salt and pepper to taste
1 lb collard greens, spinach, or cabbage washed and chopped fine (more like we could shred for slaw)

Directions:
Directions:
Heat oil in large pan. Fry onions until soft. Add tomatoes and curry powder. Cook together until soft and bubbly. Add greens and cook over low heat for 20 to 30 minutes until mixture is well blended and soft. Eat with African Stew (see recipe) and Sadza (see recipe this section).
