filleted wild game
3/4 lb. medium-sized fresh mushrooms
peppers, squash, onions (your choice)

MARINADE:
1 c. olive oil
2 Tbsp. tarragon vinegar
1 clove garlic, crushed
1 tsp. dried thyme
1 tsp. salt
1 tsp. pepper

Directions:
Directions:

Mix ingredients for marinade. Marinate grouse, quail, pheasant, venison or any wild game in marinade mixture for about 8 hours.

Drain. Place on skewers, alternating with slices of zucchini, yellow squash, green and red peppers, onions, mushrooms and other vegetables you like.

Grill until tender on charcoal grill.
