2 or more cups cooked wild rice
2 c. chicken broth
1 yellow onion, cut up and sautéed
1 qt. whole milk
2 can cream of potato
1 lb. Velveeta cheese, cubed
5 – 6 baby red potatoes, boiled, peeled and cubed
1 lb. smoked thick sliced bacon, cooked and cut up
1 (4 oz.) jar pimentos

Add chicken broth, milk, potato soup and potatoes. Make sure it’s hot; then add cheese. Heat until melted. Add rice, bacon and onion. Add pimentos.
