3 cups mashed, cooked sweet potatoes (I use canned and they are fine)
1 cup sugar
1/4 cup milk
1 tsp. vanilla
1/2 cup butter
1/2 cup coconut
2 eggs

Topping:
1 cup chopped pecans
1 cup brown sugar
1/2 cup melted butter
1/2 cup flour

Directions:

Mix filling ingredients well and place in oven proof casserole.
Mix topping ingredients and spread over filling.
Bake 30 minutes at 350º

My family will tell you two things about this recipe:
1. No one can believe it has coconut (don't tell)
2. The fire department has visited us twice on Thanksgiving Day in the last few years because of this particular dish---I always double the recipe, I never put it in a large enough casserole and it always "drips over", causes smoke in the kitchen, sets off the smoke alarm, then the fire alarm and we get to meet the latest and greatest Brentwood fireman! Not a good use of local resources, for sure!
