Mother's Zucchini Bread Recipe

3 eggs
1 C. Cooking oil
2 c. sugar
1 tsp. vanilla
2 C. grated and peeled raw zucchihi
3 C. flour
1 tsp. cinnamon
1 tsp. soda
1/4 tsp. baking powder
1/2 C. chopped nuts (optional)

Beat eggs until well mixed. Add oil, sugar and vanilla. Beat in zucchini.
In separate bowl sift flour, cinnamon, soda, baking powder. Stir into zucchini mixture. Fold in nuts if desired.
Pour into 2 well greased 4x5 loaf pans.Bake325
50 to 60 mins. until tooth pick inserted into center comes out clean.
