3 Tblsp. Margarine
1 Cup Brown Sugar
1 Can Sliced Pineapple
Cake Batter:
1 Egg
1/4 Cup Shortening
3/4 Cup Sugar
1 1/2 Cups Flour
1/2 tsp. Salt
1/2 tsp. Baking Powder
1 tsp. Vanilla
1/2 Cup Milk or Pineapple Juice

Directions:
Directions:
For topping: Melt shortening in pan - add brown sugar. Blend evenly in pan. Drain pineapple and place over top with maraschino cherry in each slice. Cover with cake batter.
For cake: Blend shortening with sugar and egg until fluffy. Add sifted dry ingredients, alternately with milk. Beat until smooth, turn onto topping. Bake 350º for 30 minutest. Turn upside down.
