Vegan Banana-Apple Pancakes Recipe

1 ripe banana
2 c. water
1/2 c. uncooked oatmeal
1 1/2 c. whole wheat flour
2 t. baking powder
1 t. cinnamon
1 t. nutmeg
vanilla (to taste)
1 apple

1. Mash banana, and combine with water.

2. Add oatmeal, flour, baking powder, cinnamon and nutmeg. Mix until smooth. Add vanilla to taste.

3. Slice apple into 1/4 " thick slices.

4. Spoon desired amount of batter onto hot skillet(with melted butter). Place 1-2 apple slices on batter. Cover Apple slices with batter.

5. Cook until bubbles form on surface of pancake. Flip, and cook until both sides are golden-brown.
