1-2 cloves garlic, pressed or minced
1/2 tsp salt
4 T. olive oil
2 T. red wine vinegar
1 can chick peas (garbanzo beans), drained
1 tomato, chopped or 1 can diced tomatoes (drained)
3 green onions, chopped

Directions:
Directions:
1. Using the back of a spoon, crush the garlic and salt into a paste in the bottom of a bowl.
2. Add the olive oil and vinegar, stirring until combined.
3. In the microwave or stovetop, heat the chick peas until warm, then stir into oil, vinegar, and garlic mixture.
4. Stir in tomatoes and green onions.
5. Refrigerate and serve cool. Tasty by itself or over a bed of romaine lettuce.
