½ c. shortening
1 ½ c. sugar
1 egg
1 c. buttermilk
2 c. flour
1 tsp. vanilla
1 tsp. soda
2 c. rhubarb, chopped

Topping:
1 tsp. cinnamon
¼ c. sugar

Directions:
Directions:
Cream shortening and sugar. Add egg. Mix well and add buttermilk. Mix in vanilla and soda. Add chopped rhubarb. Batter will be very thick. Pour into a 9x12 greased GLASS PAN ONLY!

Mix the cinnamon and sugar for the topping. Sprinkle on top of the cake batter. Bake at 325º for 35-40 minutes, or until a toothpick comes out clean.
