1 pulpo de 1 kilo
2 cebollas medianas
5 dientes de ajo picadito y un pedazo de ají
1 kilo de tomate rojo (con cáscara y todo)
1 ½ cucharadita de azúcar (opcional)
pimienta
ají no moto
1 cubito de carne
1 vaso de vino tinto
2-3 cucharadas de aceite de oliva
4 hojas de albahaca

Cómo limpiar el pulpo:
Al pulpo se le da un corte en la cabeza y retirarle la bolsa con su tinta (si se desea utilizarla, ésta se reserva). Retirarle las visceras y volteándolo del otro lado retirarle, con ayuda de un cuchillito, el pico de loro que tiene.
Lavar bien el pulpo con sal para botarle toda la baba. Ponerlo en un recipiente con sal, ajo molido y pimienta.

Preparar un aderezo con las cebollas cortadas fino a la juliana, ajo, el ají y regular aceite de oliva. Cuando ya esté amarillito echar allí el pulpo entero. Taparlo y dejarlo cocinar unos 5-10 min. hasta que tome un color rojizo.

Añadirle el vino tinto, el cubito de carne, las hojas de albahaca y el tomate licuado y colado. Taparlo y dejarlo que sude hasta que esté bien tierno y la crema espese y suba la grasita encima.
Se corta el pulpo en rajas delgaditas.
