2 lúcumas en puré
½ lata de leche condensada
1 chorrito de vainilla
6 grs. de colapez
¾ taza de crema de leche

Crocante:
250 grs. de pecanas picadas
200 grs. de azúcar
3 claras

Adorno:
crema Chantilly
chocolate cobertura

Batir las claras a punto de nieve y luego echarle el azúcar a pocos, mientras se sigue batiendo.
Agregarle envolviendo las pecanas picadas.

Colocar en un molde desarmable de 26 cm. de diámetro, bien enmantequillado y llevar al horno precalentado a 300ºF. por 25 min. Retirar y dejar enfriar dentro del molde.

Relleno:
Licuar la lúcuma con la leche condensada y la vainilla.
Hidratar la colapez en agua fría y disolverla a fuego muy bajo; mezclarla con el puré de lúcuma. Finalmente agregarle la crema de leche batida como un Chantilly bastante firme, haciéndolo en forma envolvente.

Rellenar el molde con la preparación de la lúcuma y llevar a cuajar unas horas al refrigerador.

Decorar con crema Chantilly y rulos de chocolate.
