2 T. butter
1 Med onion, sliced
2 carrots, quartered & thinly sliced
1 zucchini, quartered & thinly sliced
4 stalks celery, thinly sliced
6 c. chicken broth
4 c. cooked chicken
1 c. pastina (tiny pasta)
Salt to taste
Black pepper to taste
1 T. fresh chopped thyme

Melt the butter in a large pot. Add the onions, carrots, zucchini and celery and cook over low heat until soft, about 10 minutes. Add the stock and chicken to the pot, bring to a simmer and add the pasta. Simmer until the pasta is cooked, 3 to 5 minutes. Season to taste with salt, pepper, and thyme. Serves 6 to 8.
