1 - 2 lbs. beefs chunks
1 onion
1/2 green pepper
1/2 red pepper
1/2 yellow pepper
3 teethes of garlic
2 tbs. of Spanish olives
1 small box of raisins
4 large red potatoes
1 tsp. cinnamon
1/2 cup dry wine
2 cups of water
1 laurel leaf
1 tsp. of cumin (to taste)
1tsp. oregano
1 tsp. of salt or sea salt (to taste)
1 tsp. ground pepper (to taste)
1tsp. garlic powder
1tsp. onion powder
1 - 2 tsp. of olive oil
1/4 tbs. of butter

In a pressure cooker heat olive and butter. Once heated add onion, garlic, and peppers (red, green, and yellow), cumin, garlic powder, onion powder, salt, ground pepper, oregano, and cinnamon and cook until onions are translucent.

Stir in beef chunks until brown. Add wine, water, olives, raisins, potatoes, and laurel leaf. Bring to a boil. Place lid of pressure cooker to form a seal and let cook for 30 minutes.

Can be served with rice or with mashed potatoes. Don't forget! If serving it with mashed potatoes, no need to add the potatoes in the pressure cooker.

This was one of the recipes I watched my grandmother make many times, and, as a result, was never written down but, tweaked along the way. The addition of mashed potatoes, instead of rice, came from our days in the nursery and for me was a revelation.
