Non-stick cooking spray
4 boneless, skinless chicken breasts
1 plum tomato, finely diced
2 T. chopped fresh parsely
1/2 tsp. dried mint or 1 T. fresh mint
1/4 tsp. dried oregano
Freshly ground black pepper (to taste)
2 T. diced yellow or red bell pepper
4 T. feta cheese, crumbled
1 tsp. olive oil

Directions:
Directions:
Preheat oven to 375º.
Spray dish with cooking spray.
Arrange chicken on dish.
Combine all ingredients in bowl and spoon over chicken.
Drizzle olive oil over all.
Bake 45 min or until chicken fully cooked.
Serve hot, spooning cooking juice over each serving.
