5 lb. bag of potatoes (about 14-15 potatoes)
8 eggs
1 medium onion
3 stalks celery
large jar Miracle whip (light optional)

Cook potatoes and eggs the night before and cool.
Cook potatoes 5 at a time in microwave about 13 minutes until fork tender.
Next day:
Cut up skinned potatoes, eggs,celery and onion. Put cut up ingredients in a large bowl, add salt and pepper. Mix together 3/4 of a large jar of mayo and 1 T. mustard. Blend mayo mixture and cut up ingredients. Sprinkle with paprika and put in the refrigerator. Best served real cold.
