6 eggs, separated
1 4 oz. can California green chiles ( I use fresh
roasted New Mexico Chiles)
1 tbsp. flour
1/2 pound mild cheddar or jack cheese (I use pepper cheese)
1/4 tsp. salt
1/4 tsp. pepper, or to taste
Canned or bottled green chile salsa

Directions:
Directions:
Beat egg whites until stiff. Mix flour, salt and pepper with egg yolks; then fold into beaten egg whites.
Pour half of this mixture into a greased 2 x 9 x 13 baking dish.
Slit each chile lengthwise down and lay flat over egg batter and then cover with cheese slices. Pour rest of egg mixture over cheese. Bake 25 minutes in a 325º oven. Cut in three inch squares and serve with salsa if desired.
