1 12 oz can pink salmon
2 eggs
1/4 cup onion,chopped
1/4 cup flour
2 tbsp yellow corn meal
1/2 tsp salt
1/2 tsp ground black pepper

Dill Sauce:
1/4 cup reduced-fat sour cream
1 tbsp lemon juice
2 tbsp fresh dill
1/2 tbsp capers
Salt and freshly ground pepper

Directions:
Directions:
Mix all ingredients in a bowl and form into 1/4" thick patties. Add flour last, to adjust the firmness of the patties. Fry in cooking oil until golden brown on both sides.

Combine sour cream, lemon juice, dill and capers. Season with salt and pepper to taste.

The lemon dill sauce is optional but dill goes nicely with salmon. You could also use Remoulade Sauce, or simply serve plain with any side dish you like. If you have access to fresh salmon, of course, use it ...by all means!
