3 tbsp onion, chopped
1/4 cup green pepper, chopped
1/4 cup bacon grease
6 tbsp flour
1 can cream of chicken soup
11/2 cups milk
11/2 cups diced,cooked spam (ham may be substituted)
1 tbsp lemon juice

Cheese Biscuit dough:
2 cups flour, sifted
3 tsp baking powder
1/2 tsp salt
4 tbsp cold shortening (Crisco)
3/4 cups milk
1/2 cup grated cheddar cheese

Directions:
Directions:
Saute onion and peppers in bacon grease, stir in flour, then add soup and milk. Stir and cook until thickened. Add Spam (or ham) and lemon juice. Pour mixture into a greased baking dish.
Roll out biscuit dough and cut with biscuit cutter on floured surface. Place uncooked biscuits on top of the spam/ham mixture and bake for 15 minutes at 450º. Reduce heat and continue baking for about 10 more minutes.
