Rice Pudding Recipe

2/3 cup long grain rice
1/2 gallon whole milk
dash of salt
4 large or jumbo eggs
2 tsp. vanilla
1/2 tsp. nutmeg
1 cup sugar
nutmeg for garnish

Directions:
Directions:
Soak rice in warm water for 1 hour. Drain and put in large pot with milk and salt. Heat, stirring often. Bring to a boil. Reduce heat and cook slowly for 30 – 40 minutes. While rice is cooking, beat, by hand, the eggs, sugar, vanilla and 1/2 tsp. nutmeg. Set aside. After the rice has cooked, remove from heat and add egg mixture. Combine. Return to heat until mixture comes to a boil. Pour into large bowl and sprinkle with nutmeg. Cool for 2 hours then refrigerate.
