Ingredients:  
1 can English peas drained well
1/2 medium red onion diced
3/4 c. grated mild cheddar cheese
1/3 c. mayonnaise
2 eggs, boiled and chopped
Salt & pepper to taste
2 shakes of Tony's Seasoning

Directions:
Directions:
Mix everything together leaving peas to last so they won't get squished, and chill at least one hour.
Like a lot of salads, the next day leftovers are wonderful.

I fix this every Thanksgiving as one of my side items. Add some diced bell pepper or pimentos if you like on this dish....another version that my friend Wayno prefers is to just mix peas with some mayo and sprinkle with bacon bits.
