1/3 c. butter
1/2 c. packed brown sugar
1 can (1 lb 4 oz) sliced pineapple, drained
1 1/3 c. flour
1 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1/3 c. soft shortening
2/3 c. milk
1 tsp. vanilla
1/2 tsp. lemon flavoring (optional)
1 egg

Directions:
Directions:
Preheat oven to 350ºF.
1. Melt the butter in 10" skillet or a square pan 9 x 9 x 1".
2. Sprinkle brown sugar evenly over butter.
3. Arrange pineapple in a pattern on the butter-sugar coating.
4. Decorate with cherries if desired.
5. Mix flour, sugar, baking powder, salt.
6. Add shortening, milk, flavorings. Beat for 2 minutes. at medium speed. Add egg. Beat 2 more minutes.
7. Pour batter over pineapple. Bake at 350°F for 40-50 minutes. Immediately turn upside down on serving plate. Leave pan over cake a few minutes.
Serve warm with whipped cream.
