2 whole chicken, 1 cup chopped onion, 1 cup bell paper, 3 cups chopped celery,1 can tomato soup, 1 can cream of chicken soup, 1 small jar pimentos, 2 cups chicken broth, 12-14 ounces vermicelli(thin spaghetti, 3/4 lb. grated cheddar cheese,1/2 cup margarine

Boil chicken and cut into small pieces. Set aside to cool.Put 1/2 cup margarine in large skillet. Mix in onion, bell pepper and celery . Cook until soft. Add tomato soup, cream of chicken soup and pimento's. Also, add chicken broth. Boil spaghetti in separate pan until done. Mix all together with half the cheese. Salt and pepper to taste.Put in Pam sprayed 9x 13 pan. Sprinkle the rest of the cheese on top. Bake @350º for35-45 minutes or until bubbly.

You can half this recipe for 2 people. Also, freezes really well. Freeze before you bake and do cheese on top after thawing.
