1 small box of Uncle Ben's long grain rice
6 slices of bacon, fried and crumbled
2 tbsp. minced onion
2 cans of cream of potato soup
2 soup cans of milk
2 c. Velveeta cheese

Directions:
Directions:
Prepare rice as directed. Add all ingredients except cheese to rice in pan. Simmer rice mixture for 15 minutes. Add cheese, simmer additional 25 minutes, stir occasionally.

I always sprinkle with popcorn for a crunchy topping.
