1 cup (2 sticks) softened butter
3/4 cup white sugar
1 egg yolk
1 1/2 cups flour
1/2 cup cornstarch
1/2 cup finely chopped nuts of choice
1tsp vanilla

Directions:
Directions:
set oven to 275º.
Combine butter and sugar, add egg yolk until well mixed. Add flour and cornstarch till just well blended.
fold in nuts and vanilla.
Roll into log and regrigerate or freeze for at least 30mins.
Slice 1/2" thick and place on ungreased baking sheet.
Bake at 275 for 30mins, no longer
let cool on cookie sheet before removing.
store in airtight container or cookies become too soft.
makes approximately 3doz cookies
