1 1/2 c. brown sugar
1/2 c. water
4 tsp. pure vanilla extract
1 tsp. salt
8 cups rolled oats
2 c. nuts (chopped pecans, slivered almonds)
Optional: dried fruit (cherries, craisins, raisins, blueberries)

Directions:
Directions:
Preheat oven to 275º.
Get out 2 cookie sheets.
Combine brown sugar and water in a 4 c. microwave-proof glass measuring cup. Place in microwave on high for 5 min. and cook until sugar is completely dissolved.
Remove from microwave and immediately add vanilla and salt.
In a large mixing bowl, combine oats, nuts, and brown sugar syrup mixture. Stir until thoroughly mixed.
Spread the granola onto cookie sheets.
Bake 45-60 minutes or until golden brown
When mixture comes out of oven, add dried fruit if you wish.
Store in airtight container.
