2 c. cooked chicken, chopped

2 c. celery chopped (I use a little less)
2 tsp. minced onion
1/2 c. pecans, chopped (optional)

1 c. salad dressing (I use low-fat Miracle Whip for part and sour cream for part to reduce fat)
1/2 tsp. salt
2 Tbsp. lemon juice
pinch of sugar

1/2 c. grated sharp cheddar cheese
1 c. crushed potato chips

Directions:
Directions:

Combine chicken, celery, pecans, salad dressing, salt, lemon juice, onion and pinch of sugar.

Pour into greased baking dish.

Mix cheese and potato chips and sprinkle over chicken mixture.

Bake at 450º for 10 minutes or until cheese melts and chips are lightly browned.


My co-teacher, Mary Elizabeth Watkins, gave me this recipe when we first began teaching at Laurel County High School. It's been a family favorite ever since.
