8 hojas decolapez
300 gramos de albaricoques
1 taza de azúcar

Directions:
Cocinar los albaricoques con agua que los cubra y cuando esten tiernos machucarlos con un tenedor.

Preparar una miel a punto de hilo, con el azúcar y 1 taza del agua de la que hirvieron los albaricoques.

Batir las claras a la nieve y agregarle la miel en forma de hilo, calientita, pero no hirviendo. Agregar la colapez disuelta en agua y al ultimo echarle de a pocos los albaricoques. Mezclar en forma envolvente para que no se baje la crema.

Poner en un molde aceitado con hueco al centro al refrigerador para que cuaje. Es mejor prepararlo la vispera.

Desmoldar y si se desea, echarle encima un poco de mermelada de albaricoques. Se sirve con la crema de yemas.

8 yemas
2 tarros de leche evaporada
½ cucharadita de maizena disuelta en un poco de la leche
1 ½ tazas de azucar
½ cucharadita de vainilla

Se cocina hasta que tome consistencia moviendo todo el tiempo.
