One 9" pie crust, unbaked
5 medium-sized ripe tomatoes, sliced
1 c. chopped green onions (scallions), green stems included
1 T. chopped fresh oregano (or 1 tsp. dried)
1 T. " " basil
Salt and pepper to taste
2 c. grated sharp Cheddar cheese
1 c. Hellmann's mayonnaise
1/2 c. grated Parmesan cheese

Preheat oven to 400º F.
Prick pie crust with a fork and bake 10 minutes. Remove from oven and reduce heat to 325º F.
Cover the bottom of the crust with two layers of tomatoes. Sprinkle on half the scallions, oregano, basil and season with salt and pepper. In a bowl, combine the cheddar cheese and mayonnaise, and mix until blended. Spread half the mixture over the tomatoes. Repeat the layering with the remaining tomatoes, scallions, herbs and seasonings. Spread remaining mayonnaise and cheese. Top with the Parmesan and bake till golden and firm. Approximately 45 minutes. Let the pie cool slightly so that it will firm up a bit. Cut into wedges as a first course or as a vegetable.
