2 10-ounce packages of frozen chopped spinach
2 cups herbed stuffing mix
2 medium onions, minced
2 eggs
3/4 cup butter softened
1/2 cup parmesan cheese
1/2 T. garlic salt
1 tsp. thyme
4-5 ripe tomatoes, thickly sliced
pepper to taste

Directions:
thaw and drain spinach. Mix all the ingredients together except the tomatoes. Arrange tomatoes in a 13x9 baking dish and spread spinach mixture over tomatoes. Bake at 350º for 20-30 minutes.
