1 cup granulated sugar
1/2 cup water
1 egg white
1/2 tsp vanilla
1 tbsp baking powder (or cream of tartar)

Directions:
Directions:
Beat egg white until frothy, add baking powder (or cream of tartar). Beat until stiff and dry.

Cook sugar and water until it has reached the honey stage, or drops heavily from spoon. Add 5 tablespoons of the syrupy mixture slowly to egg whites, beating in well. Then cook remainder of syrup until it threads and pour
over egg whites, beating thoroughly. Add vanilla (or other flavoring of choice) and beat until cool.

There are different versions of "boiled icing" using brown sugar, adding fresh coconut or different flavorings such as maple or almond. It is very simple and allows for a lot of versatility using the basic recipe. It's great on lemon or almond pound cake.
