2 C canned drained/rinsed black beans
2 T minced white onion
4 T chopped fresh cilantro
3 T fresh lime juice
5 T olive oil
1 tsp ground cumin
1 red bell pepper roasted, seeded and cut into 1/2" slices
1 C diced hearts of palm
1 C grape tomatoes quarted lengthwise
1 med ripe Hass avocado peeled and diced

Directions:
In mixing bowl combine beans, onion & cilantro. Add lime juice, oil, cumin and mix up.
Salt & pepper to taste
Stir in red bell pepper, tomatoes and hearts of palm.
Cover & chill 1 hour ( I like 8 hrs--more flavor)
Stir in avocado just before serving.
