1 med. onion, chopped
2 T vegetable oil
1 cup chopped cooked ham
1 garlic clove, minced
2 (15 oz cans black-eyed peas,rinsed & drained
1 (14 oz can chicken broth
1 tsp rubbed sage
1/2 tsp dried thyme
1/2 tsp pepper

Toppings: chopped tomato, sliced green onions, pepper sauce

Directions:
Directions:
Saute chopped onion in hot oil in a medium saucepan over med. high heat 3 minutes.
Stir in ham and garlic and saute 3 minutes. Stir in peas and next 4 ingredients. Bring to a boil, reduce heat and simmer, stirring occasionaly, 20 minutes. Serve with toppings.
