Eggplant Casserole Recipe

1 large eggplant cut into 1/2 in cubes
1 small onion
1 lb ground beef
1/2 c. white wine
1/2 c. tomato sauce
2 egg whites beaten
1/4c. bread crumbs

2 T flour
2 T melted butter
1/2 tsp salt
1 1/2 c. milk
2 egg yolks

Brown cubed eggplant. Saute onions and meat. Add white wine and tomato sauce. Mix in 2 beaten egg whites and bread crumbs. Put into buttered dish. Make sauce and pour on top with bread crumb butter mixture. Bake at 350 for one hour.
