1 ¾ cup flour
1 ¼ tsp baking powder
½ tsp baking soda
2/3 cup shortening
2/3 cup sugar
2 eggs
2 Tbsp milk
1 cup mashed ripe banana
¼ cup chopped nuts or chocolate chips (optional)

Directions:
Directions:
In a medium bowl beat sugar and shortening until fluffy. Add eggs one at a time, and the milk. Beat until smooth after each addition. Stir together flour, baking powder and baking soda in a separate bowl. Add flour mixture and banana alternately to creamed mixture. Fold in nuts or chocolate chips. Pour batter into lightly greased loaf pan. Bake at 350º F for 60-65 minutes or until wooden pick inserted near center comes out clean. Let cool for 10 minutes, then remove from pan. Leave set until completely cool.
