1 egg
1/3 cup flour
1/3 cup liquid (combine white wine and water)
Parmesan cheese
parsley
chicken broth

Directions:
Directions:
Beat the egg then add the flour. Add the liquid last. Very important – grease the pan before each crepe!! Use a small frying pan and pour in a thin layer of batter. Cook until “dry”. Fill with about 1 tbsp. grated Parmesan cheese and parsley. Roll up. Use in place of noodles with hot chick broth. Lay the crepes on the bottom of a flat soup bowl and pour the chicken broth over.

My Mom, Gloria Rapini Jarzabek, also used to make them using milk instead of the wine. We would spread them with jelly, roll them up, and eat a million!!
