1/2 lb. lean ground beef
1 carrot, finely minced
1 rib of celery, finely minced
1 medium onion, finely minced
4 peeled tomatoes, finely minced
6 oz. can tomato paste
1 1/4 cup beef broth
1 - 2 tsp. Italian herbs (basil and oregano)

Brown beef in a skillet over low heat. Drain. Add all the remaining ingredients. Cover tightly and simmer for one hour. Uncover and simmer until thick. Serve on hot pasta.
