2 Cups of egg whites.
2 tsp of fresh cream of tartar
pinch of salt
1 1/4 Cup sugar
1 1/4 Cups of cake flour- after sifting
3/4 Cup sugar
1 tsp vanilla

Directions:
Directions:
Beat egg whites until foamy. Add cream of tartar and salt and beat again until sift but not dry. Gradually add sugar, while beating until stiff again. Remove from mixer into large bowl. Sift together the cake flour and 3/4 sugar and gradually
fold this into egg white mixture. Add the vanilla.
Gently pour into an angel food cake pan. Bake in pre-heated oven at 375 for 35 min.

You cake will be highest if made on a sunny low humidity day. Serve with or without frosting.
