2 c. flour
2 1/2 tsp. baking powder
3/4 c. crunchy peanut butter
2 eggs, slightly beaten
1/2 c. sugar
1/2 tsp. salt
3/4 c. milk
1/4 c. fruit preserves

Directions:
Directions:
Preheat oven to 400º.
Combine flour, sugar, baking powder and salt in mixing bowl. Cut in peanut butter until resembles coarse crumbs. Add milk and eggs all at once, stirring just until flour is moistened. Place two tablespoons of batter in greased muffin cups. Place tsp. fruit preserves in center of batter and top with 2 tablespoons more batter. Bake 15-17 min.. Makes 12 muffins.
