Penne in Cream Sauce with Sausage Recipe

1 T butter
1 T olive oil
1 medium onion, diced
3 cloves garlic, minced
1 lb sausage
2/3 C dry white wine
1 (28oz) can diced tomatoes
1 C whipping cream
6 T parsley
1 lb penne pasta
1 C grated Parmesan cheese

Melt butter and olive oil in heavy large skillet over medium-high heat. Add onion, garlic and sausage; saute until golden brown and tender. Drain any excess drippings from skillet. Add wine to skillet and boil until almost all liquid evaporates. Add tomatoes with juices and simmer 3 minutes. Add cream; simmer until sauce thickens slightly. Stir in 4 T parsley. Season to taste with salt and pepper. Remove from heat. Cook pasta until tender but still firm to bite. Drain pasta; transfer to large bowl. Pour sauce over pasta. Add 3/4 C Parmesan cheese; toss to coat. Sprinkle with remaining cheese and parsley.
