3 medium potatoes
1 small onion, finely chopped (1/4 c.)
1 c. boiling, lightly salted water
milk
3 Tbsp. melted butter
2 Tbsp. flour
1 c. (4 oz.) shredded natural Swiss cheese
3/4 tsp. salt
freshly ground pepper
2 Tbsp. snipped parsley

Directions:
Directions:
Wash, pare and cut up potatoes. In 2 qt. sauce pan, add potatoes and onions to the boiling water; cover and cook until potatoes are tender (about 20 min.). Do not drain potatoes. Mash potatoes slightly. Measure mixture and add enough milk to make 5 cups. Blend melted butter, flour, parsley, salt, and pepper. Stir into potato mixture in sauce pan; cook and stir until mixture thickens and bubbles. Add cheese; cook and stir until cheese is partially melted. Serve immediately.
